With the festival of themed dinners dedicated to the flavours of autumn, after pumpkin, Porcini and chestnut, we are discovering a new ingredient: maize. New as the new world from which it comes, in recent centuries has spread in traditional and poor Italian cuisine in various forms, enriching our tables not only good polenta.
